Ingredients
  • beef steak
  • hot sauce for binder under dry rib

Dry Brine:

  • 1 Tbsp granulated garlic
  • 2 Tbsp + 2 tsp kosher salt
  • 4 tsp Lawry’s (or copycat, see below)
  • 4 Tbsp ground black pepper

Sear Sauce:

  • 1 cup mayonnaise
  • 1 tsp garlic powder
  • 1 tsp red wine vinegar
  • 1 tsp water (optional)
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper

Alabama White Sauce:

  • 1 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 2 Tbsp brown sugar
  • 1 Tbsp lemon juice
  • 1 tsp prepared horseradish
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper

(Optional)

Lawry’s Alternative:

  • 2 Tbsp kosher salt
  • 2 tsp white sugar
  • 3/4 tsp paprika
  • 1/4 tsp ground turmeric
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp cornstarch
